Raw Pumpkin / Zucchini Bread
Ingredients
- 3 cups soaked grains (oats, millet, quinoa, bulgur, barley, etc.)
- 1 1/2 cups pumpkin puree or grated zucchini
- 1 tsp grated orange peel
- 1 tsp ground cinnamon
- 1/2 cup chopped dried fruit (apricot, currants, coconut, raisins, apple, etc.)
- 1 cup peeled and segmented orange
- 1/2 tsp powdered ginger
- 1 cup soaked chopped raw nuts (pecans, cashews, walnuts, almonds, brazil nuts, etc.)
Instructions
- puree all the ingredients except dried fruit together
- mix in the dried fruit
- form into loaves on a teflex sheet in a dehydrator
- dehydrate at 105 degrees, about 4 hours
- remove the teflex sheets and dehydrate another 4 hours
